My Daily 3-Ingredient Caramel Crunch Protein Cookie

This is the cookie I’ve been making almost daily.

If you’re a mum, you learn very quickly that snacks need to be simple, fast, and ideally edible with one hand.

It takes about six minutes, uses just three ingredients, and somehow turns into this buttery, caramel-like, slightly crunchy cookie that pairs perfectly with coffee.

And yes… the main ingredient is tallow.

After sharing my thoughts on trimming fat from conventional meat, I wanted to also show what I do use and love in my own kitchen.

This is it.


Why This Cookie Works

This isn’t a simple “treat.” It’s genuinely nourishing.

Each cookie provides:

  • Around 21g of grass-fed protein

  • Stable energy (no blood sugar spike — I tested this with a CGM)

  • High-quality fats that keep you full and satisfied

It’s slightly sweet, rich, and incredibly satisfying in a way most “healthy” snacks aren’t.


3 - Ingredients

2 tbsp grass-fed and finished tallow

1 scoop grass-fed Cinnamon Roll protein powder

1/4 tsp filtered water (don’t skip this!)

Optional (highly recommended):

  • macadamia nuts

  • dark chocolate chips


Method

Line a small circular shaped bowl with parchment paper.

In a small saucepan, gently melt the tallow over low heat.

Once fully melted, turn off the heat.

Add the protein powder and mix until smooth.

Add 1/4 tsp water and mix again — the mixture will become sticky and slightly stringy.

Quickly drizzle or scoop the mixture into the container before it hardens.

Optional: top with macadamia nuts or dark chocolate.

Place in the fridge for about 20 minutes, or until set.

Break apart and enjoy.

Texture Note (Please Don’t Skip This)

When you add the water, the mixture will turn sticky and almost floss-like.

This is what creates that “caramel crunch” texture once chilled.

Without the water, the cookie will be soft and more fudge-like. If that’s your thing, go for it!

With the water, you get something closer to a toffee like the center of a butterfinger!

Storage

Best enjoyed within 24 hours for optimal texture and flavor.

Store in the fridge, ideally in an airtight container.

After a day, it can taste slightly stale if you don’t store it properly — but if I'm being completely honest… it rarely lasts that long.
