3 Ingredient Enoki Nori Wraps (mum & kid-approved)

The healthy snack my kids ask for almost every day.

Ingredients

Method

  • First, wash the enoki mushrooms. (See washing instructions below)

  • Separate into 2 small clusters.

  • Split a sheet of nori in 1/2.

  • Wrap the enoki cluster in the nori sheet. KimBap style.

  • Slice each enoki nori roll into 3 pieces.

  • Place the 6 pieces side by side in air fryer and top with tallow.

    • If you do not have tallow, a spritz of 100% pure avocado oil (like this one) works perfectly fine too!

  • Air fry or bake at 385-400F for 10 minutes.

  • Optional:

    • Sprinkle with sea salt to taste

    • Drizzle with home-made honey drizzle (mix the honey + water using measurements above.)

    • Feel free to swap the honey drizzle for a few drops of coconut aminos!

Washing Enoki

  • Trim off the tough root/base first.

  • Separate into 2 smaller clusters.

  • Give them a quick rinse under cool running filtered water.

  • Drain well and pat dry.

  • Avoid soaking them - they absorb water easily and won't crisp as well in the air fryer.
