Korean Seaweed Crisp Recipe

3-Ingredients

Rice paper (Vietnamese spring roll wrap)

Organic Seaweed (raw/unroasted brands we love: seasnax / gimme)

Healthy fat (I.e. 100% avocado oil @primalkitchen , coconut oil, beef fat / tallow or ghee if not allergic to cow’s milk)

How to make Korean seaweed crisps

•Soak rice paper in warm water for a few sec. Just enough time to make it stick to the seaweed sheet

•Allow the rice paper to thoroughly stick and dry onto the seaweed sheet (set it & forget it!)

•With scissors cut into little rectangles

•Heat oil at medium until you see bubbles

•Throw in the cut square making sure the rice paper side is up and fully submerge it by pressing it down with wooden chopsticks for no more than 10-15 sec.

Notes

•This method rapidly transforms the damp seaweed + rice paper square into a puffy white crisp!

•Keep the oil at 300-350°F as the temperature of oil & duration of frying alters the crisps’ taste and texture.

•make sure this nori / gim (김) snack is deep fried in a healthy fat and choose quality nori (organic + one without a lot of holes in the sheet!)

•It looses its crispy texture if you keep it out for too long after it’s been fried - serve shortly after it’s cooled down

•Optional: sprinkle a pinch of sugar or seasoning of choice to make it more flavorful. We enjoy it straight without any sugar… sooo yum 🤤

How to Make a Smoothie

Setting a strong foundation around nutrition is key to making a nourishing and delicious smoothie. After I meet my family’s nutritional needs through the ingredients, I play around with the flavor and texture to create a yummy smoothie with a thickness level of our choice.

Smoothie Foundation— Nutrient Dense

Kelly Leveque’s Fab 4 Smoothie Basics Formula:

• Protein: 20-30 grams from quality protein powder

• Fat: 1-2 Tbsp

• Fiber: 10 grams or 1 to 2 Tbsp

• Leafy greens: A handful

• Liquid: 1-2 cups of sugar-free milk of choice

• Optional - Fruit, superfood and other toppings:

• Fruit:1⁄4 to 1⁄2cups

• Superfoods: 1-2 tbsp

“Banberry” Smoothie— inspired by: Polly’s Strawberry Banana Cream Pie in SoCal

  • 1cup frozen organic strawberries

  • 1/2 frozen banana

  • 1 tbsp coconut cream (fat)

  • 1/4 avocado (fiber/fat)

  • 1cup coconut milk

  • 10g acacia fiber (fiber)

  • 2scoops *BeWell Vanilla (protein) = 20+g protein & 16g naturally occurring collagen

  • Optional: handful of ice for thickness

Allergy Awareness Week & Energy Ball Recipe

Allergy Awareness Week—

created to raise awareness of the challenges that families living with allergies face in our day to day.

Ultimately this week is about establishing what help and support looks like for people living with allergic conditions.

Harsh Reality

Upon hearing about my child’s multiple food allergies, I often get an unsolicited comment along the lines of:

what CAN she eat?! There’s nothing left!

My response: Honestly, there’s a LOT of good food she can eat.

to kick off this years allergy awareness week, we’re sharing our current favorite energy ball recipe.

Chocolate Chip Energy Ball Recipe

  • Top allergen free

  • packed with complete grass fed beef protein, naturally occurring collagen, and gut healing properties.

  • Plus, it tastes damn good without messing with blood sugar levels.

  • No food processor needed.

Ingredients

2 scoops *Be Well By Kelly vanilla protein powder

2 scoops Acacia fiber (I use wellmade brand)

3 tbsp coconut flour

Sprinkle of Maldon Sea Salt (optional)

Dash of cinnamon (optional)

Handful Santa Barbara Chocolate chips (kind of optional)

4 tbsp Sunbutter

3 tbsp water

Mix dry ingredients first! Stir in sunbutter. Add water last. Roll into balls and store in fridge immediately to get a firmer texture.
