Mango Sticky Rice Popsicles with Crunchy Coconut Shell

There’s something about combining sweet, late summer, juicy mangoes + coconut… it’s like God intended them to be paired… for a gut-healing, vitamin & mineral-rich party in the mouth.

INGREDIENTS

Popsicle Base

  • 2 cups ripe mango chunks (fresh)

  • 1/2 cup coconut milk (look for brands with NO GUMS / preservatives / emulsifiers that disrupt the gut)

  • 1/2 tbsp psyllium husk or acacia fiber (optional)

  • 1 c coconut sticky rice (optional, but adds a nice chewy factor!)

Crunchy Coconut Shell

  • 7 oz organic creamed coconut (you will have leftover to freeze into delicious coconut “white chocolate” bars! Recipe coming soon)

  • 1-2 tbsp coconut oil

METHOD

  1. Cut cooked sticky rice into small cubes and chill.

  2. Blend mango, coconut milk, *BWBK protein powder (code MUMWITHABUN), and psyllium husk/acacia until smooth.

  3. Pour mango mixture & place sticky rice cubes into popsicle molds, and insert sticks.

  4. Freeze for 4 hours.

  5. Gently mix the massaged melted coconut cream (comes in a kneadable package) with melted coconut oil and *raw honey (optional but I love it for the mineral content, calming benefits & brain support + extra deliciousness). Allow coconut mixture to cool to room temperature.

  6. Dip frozen popsicles into the coconut mixture, allow excess to drip off - shell will form/harden on the spot!

  7. Enjoy immediately!

  8. While it’s best if fresh, freeze leftovers. Allow the popsicle to sit out for a few minutes before biting into so the shell is easy to bite / enjoyable.

  9. Store in a freezer-safe container for up to 2 weeks.
