Blood-Sugar Friendly Mugwort Brownies

What You Need: 1 bowl

Dry ingredients

Wet ingredients

  • ¼ cup melted coconut oil

  • 1 cup full-fat coconut milk

Method

  1. Preheat oven to 350°F.

  2. Line an 8x4 loaf pan with parchment.

  3. In one bowl, whisk together all dry ingredients.

  4. Add melted coconut oil + coconut milk.

  5. Mix until smooth.
    (Coconut flour thickens quickly—let batter sit 1–2 minutes.)

  6. Pour into pan and smooth evenly.

  7. Bake 30-32 minutes until the center is just set.

  8. Cool 20 minutes minimum before slicing.

Maple Sweetened Mugwort Brownies

(Slightly softer, more moist, and a bit more sweet but still balanced)

Ingredients

Dry

Wet

  • ⅓ cup pure maple syrup

  • ¼ cup melted coconut oil

  • ¾ cup coconut milk

  • 1 tsp vanilla extract

Method

  1. Preheat oven to 350°F.

  2. Line an 8x4 pan.

  3. Combine all dry ingredients in one bowl.

  4. Add maple syrup, oil, coconut milk, and vanilla.

  5. Stir until fully incorporated.

  6. Let batter sit 2 minutes so coconut flour hydrates.

  7. Spread evenly in pan.

  8. Bake 30–34 minutes.

  9. Cool completely for best texture.
