The Ultimate Grass-Fed Tallow Chili Oil Recipe

Method

  1. Infuse the Tallow: Add the grass-fed tallow, star anise, and bay leaves to a small saucepan. Heat over medium-low heat until it reaches 300°F (150°C). Maintain this temperature for about 10 minutes to infuse the tallow with the aromatics.

  2. Prep the Spice Base: While the oil infuses, combine the organic red pepper flakes, gochugaru, Sichuan peppercorns, onion powder, and sea salt in a heatproof glass or ceramic bowl.

  3. Strain: Carefully remove and discard the star anise and bay leaves from the hot tallow.

  4. The Sizzle: Slowly & carefully pour the hot tallow over your spice mixture. It will sizzle immediately and release an incredible aroma.

  5. Cool & Settle: Stir the mixture well and let it cool completely to room temperature.

  6. Age Overnight: Transfer the mixture into a clean/sterilized glass jar. Place it in the fridge overnight before using—the flavor peaks after 24 hours!

💡 Important Texture Note: Because high-quality beef tallow is solid at room temperature, this chili oil will harden as it cools down in the fridge. Don't worry! The second it hits a warm or hot dish, it melts immediately into a gorgeous, glossy, rich sauce.
